Tropical Traditions Shredded Coconut {review and giveaway}
Tropical Traditions 100% natural Shredded Coconut, Coconut Flakes, and Coconut Chips are made from organic dried coconuts in the Philippines that are grown with no fertilizers or pesticides. This premium dried coconut contains no additives or preservatives, and is not sweetened. Unlike most dried coconut on the market, their dried coconut products are not treated with sulfites to keep them white. They are a great addition to recipes and baking, or just for snacks!
I was given the opportunity to review a 560z bucket of shredded coconut from Tropical Traditions. Note that there are two other types of coconut available which include coconut flakes and coconut chips, both are different in size and more suitable for toppings and adding to things like your own trail mix, etc.
The coconut I choose to review is more suitable for things like macaroons, shrimp, or in my case Coconut cake! The coconut came in a bucket which is resealable. I had a little trouble getting it open and closed without the use of a hammer and my husband but no worries. This means the coconut is sealed very tightly keeping it fresh for quite a while unlike the kind you’ll find in the grocery store in a plastic bag and pre-sweetened.
I whipped up the best coconut cake ever for Easter! Everyone who had it loved it and begged for the recipe so they could try it out too! Here it is below if you are interested:
* 1 (18.25 ounce) package white cake mix
* 1 cup sour cream
* 2 cups white sugar
* 1 (14 ounce) package flaked coconut
* 1 (8 ounce) container frozen whipped topping, thawed
Directions
1. Prepare cake mix as per package directions for a two layer cake.
2. Mix together sour cream, sugar and all but a portion of the coconut (some should be reserved for top). Set aside one cup of this mixture. Spread remainder between layers of cake.
3. Combine whipped topping and the reserved sour cream mixture. Use this to ice the cake. Store in the refrigerator for three days before cutting. The longer it is refrigerated, the better it is!
This cake kept moist a delicious for over a week and I can only say that, because we ate it all up before it could sit any longer! Oh, I also substituted the vegetable oil asked for in the cake mix with Coconut Oil in which I think it made taste more delicious.
