Spring has finally sprung and that’s put me in a baking all sorts of delicious seasonal treats to share with friends and family once again! Every Easter for the past several years, I’ve made a delicious coconut cake which was loved and adored by all whom took part in eating it. And, I was intending on whipping up another this year and still might do so but, this year since my kids are getting older, I wanted to whip up a little something more fun for them so to speak and did so with flying colors!
I don’t know why, but when I think Spring time and Easter, I think coconut whether it’s for a dessert or for a main course such as curried coconut shrimp! The only coconut I tend to use comes from Tropical Traditions and just recently I was given the opportunity to review a 560z bucket of shredded coconut to use in my cooking this year!
We have a first here, so a round of applause just may be in store for me. After all these years, I have to admit I’ve never made cupcakes! Can you believe it? For some reason I thought it was pain staking process but it was really a walk in the park and I can’t wait to make them again. The ideas and color combination in how to create these delicious little masterpieces are already filling my mind. I can’t help but ponder what kind I’ll be making for my daughter’s 4th birthday coming up very soon!
My recent cupcake masterpiece was topped off with Tropical Traditions Shredded Coconut that I made favor lush green spring lawn (just add a few drops of food coloring and shake the coconut up in bag to get the color!). The sort of coconut used is perfect for topping cupcakes, trail mixes, macaroons, cakes, creams pies, and whatever else you’d love to garnish. I like that the coconut I was sent comes in a bucket that is sealed very tightly keeping it fresh for quite a while unlike the kind you’ll find in the grocery store in a plastic bag and pre-sweetened.
